Sorry to hear that your Mum is unwell. Salicylates vary with each type of apple. It is true that naturally occuring chemicals are highest just under the skin as the produce uses this as their natural defence system. Granny Smith apples are the highest in salicylates compared to other apples, from my understanding. I would avoid apples all together for now and make sure she gets lots of fermented products. If you can get her having some keifer and raw milk (not processed). Remove cooked dairy and reduce or remove meat if possible. It is hard to know what exactly is causing the problem and if she really wants to solve this then I recommend she do a &lt;a href=&quot;http://www.thenewsonfood.com/food-intolerance/food-elimination-diet/&quot;&gt;food elimination diet&lt;/a&gt;. Increase water and remove all additives and preservatives. Go as raw (in food...that is...hehe) as possible.

My Mum has severe food allergies and is constantly trying to guess what it is she has eaten that has made her get the runs etc. She has been told that she can&#039;t eat the skin on apples because of the Salicyates but has just made a batch of stewed apples without the skin and seems to be sick from that.
